- 2 salmon fillets, skin-on, about 180g each
- 3 tbsp white miso paste
- 2 tbsp mirin
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp grated ginger
- 1 clove garlic, minced
- 1 tbsp sesame seeds, for garnish
- 1 stalk spring onion, sliced
Method
- 1
Whisk miso, mirin, soy sauce, honey, ginger, and garlic in a small bowl until smooth.
- 2
Place salmon fillets skin-side down on a foil-lined baking tray. Spread the miso glaze thickly over the top of each fillet.
- 3
Let marinate for 10 minutes at room temperature (or up to 24 hours in the fridge if prepping ahead).
- 4
Preheat oven grill to high. Broil salmon for 8-10 minutes until the glaze is bubbling and caramelised and the fish flakes easily.
Tip · Watch closely — the honey in the glaze can burn quickly under the grill. - 5
Garnish with sesame seeds and spring onion. Serve with steamed rice and sautéed greens.
Pro tips
- ✦White miso (shiro miso) is milder and sweeter than red miso — perfect for this glaze.
- ✦The glaze works beautifully on chicken thighs and tofu too.
- ✦For extra caramelisation, brush on a second layer of glaze halfway through broiling.
