Miso Glazed Salmon

Salmon fillets coated in a rich miso-mirin glaze and broiled until caramelised and flaky. This is my weeknight fish recipe when I want something that feels restaurant-quality but requires almost no effort.

This is my 'I have nothing in the fridge' emergency recipe because miso paste, mirin, and soy sauce are always in my pantry. It turns a basic salmon fillet into something that feels like a Japanese izakaya dish.

Miso Glazed Salmon

  • 2 salmon fillets, skin-on, about 180g each
  • 3 tbsp white miso paste
  • 2 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 tbsp sesame seeds, for garnish
  • 1 stalk spring onion, sliced

Method

    Whisk miso, mirin, soy sauce, honey, ginger, and garlic in a small bowl until smooth.

    Place salmon fillets skin-side down on a foil-lined baking tray. Spread the miso glaze thickly over the top of each fillet.

    Let marinate for 10 minutes at room temperature (or up to 24 hours in the fridge if prepping ahead).

    Preheat oven grill to high. Broil salmon for 8-10 minutes until the glaze is bubbling and caramelised and the fish flakes easily.

    Tip · Watch closely — the honey in the glaze can burn quickly under the grill.

    Garnish with sesame seeds and spring onion. Serve with steamed rice and sautéed greens.

Pro tips

  • White miso (shiro miso) is milder and sweeter than red miso — perfect for this glaze.
  • The glaze works beautifully on chicken thighs and tofu too.
  • For extra caramelisation, brush on a second layer of glaze halfway through broiling.
