- 1 fresh mozzarella ball in brine, about 125g drained — fior di latte or buffalo
- 1 cup thickened cream
- 1 pinch flaky salt

Drain the mozzarella and tear it into tiny pieces with your fingers, pulling it apart into thin strands and shreds.

Tip the torn mozzarella into a bowl, pour over the thickened cream, and add a good pinch of flaky salt.

Mix well until the mozzarella shreds are evenly coated in the cream.

Cover and set in the fridge overnight so the cream and cheese meld into a thick, spoonable texture. Serve cold.
Tip · It will keep in an airtight container in the fridge for 2–3 days.
