This 15 minute tuna pasta turns a humble can of tuna into something spectacular. Sun-dried tomatoes and kalamata olives get sautéed in their own flavourful oil with onion and garlic, then simmered with flaked tuna and passata into a rich, punchy sauce. It's full of flavour, needs no standing around at the stove, and feeds 5–6 people from mostly pantry staples — exactly what you want on a busy weeknight.

This is one of those meals I make when I want something full of flavour but don't want to stand around the stove for ages. It comes together in 15 minutes, feeds a crowd, and turns a boring can of tuna into something I genuinely look forward to eating.

Ingredients

  • 500 g pasta, 1 packet, any shape
  • 425 g canned tuna in springwater, drained
  • 700 g passata, 1 jar
  • 270 g sun-dried tomatoes in oil, drained, reserving 2 tbsp of the oil
  • 100 g pitted kalamata olives, sliced
  • 1 onion, sliced
  • 1 tbsp minced garlic
  • 1 tbsp brown sugar

Method

    Slice the onion and olives. Drain the sun-dried tomatoes, reserving 2 tablespoons of their oil for cooking.

    Tip · Don't throw out the sun-dried tomato oil — it's packed with flavour and replaces the olive oil entirely.

    Heat the reserved sun-dried tomato oil in a large frying pan, then add the onion and minced garlic and sauté until browned.

    Add the olives and sun-dried tomatoes and cook until softened. Flake in the tuna, then pour in the passata and brown sugar and simmer for 5 minutes.

    Cook the pasta according to the packet instructions, then add it to the sauce and stir until every piece is coated.

    Tip · Keep a splash of pasta water aside — if the sauce gets too thick, a little loosens it right up.

Pro tips

  • ✦Get the pasta water boiling before you start the sauce and everything will be ready at the same time.
  • ✦Tuna in springwater keeps the sauce light; tuna in oil works too, just drain it well.
  • ✦The brown sugar balances the acidity of the passata and sun-dried tomatoes — don't skip it.
  • ✦Leftovers keep well in the fridge for 2–3 days and make a great next-day lunch.
